Abstract

La présente invention a pour objet un procédé de déminéralisation d'une solution sucrée A mettant en œuvre une solution sucrée D comprenant les étapes suivantes : i) optionnellement une étape d'électrodialyse de la solution sucrée A et/ou D au moyen d'un électrodialyseur en sorte d'obtenir une solution sucrée B; ii) au moins une première étape de déionisation capacitive de la solution sucrée A ou B au moyen d'un dispositif de déionisation capacitif en sorte d'obtenir un jus sucré C. Avantageusement, la solution sucrée D est issue de la décharge en ions du dispositif de déionisation capacitif à l'étape ii), et subit une étape de déionisation capacitive, notamment à l'étape ii), et/ou une étape d'électrodialyse, notamment à l'étape i). La présente invention a également pour objet un procédé de fabrication de sirop sucré mettant en œuvre ledit procédé de déminéralisation appliquée à une solution sucrée A.
