Abstract

L'invention concerne un dispositif de culture pour la production de substances par fermentation en culture aérobie, caractérisé en ce qu'un dispositif séparateur gaz-liquide (5) est prévu à la sortie d'évacuation (4) du dispositif (1), un dispositif séparateur de gouttelettes (7) est prévu à la sortie des gaz (10) du dispositif séparateur gaz-liquide et un détecteur de mousse (13) est prévu dans la conduite d'entrée, la conduite de recirculation (12) et/ou à l'intérieur du dispositif séparateur de gouttelettes (7); l'invention concerne aussi un procédé de démoussage et de contrôle de la mousse au moyen d'un tel dispositif de culture.
