Abstract

Prodn. of potatoes peeled and ground in a uniform spherical size ''parisian"' potatoes) from unpeeled potatoes by mechanical treatment of each potatoe, is described. The unpeeled potatoes are peeled and polished in the gap between two rollers revolving in the same rotational direction but at different speeds forming a sufficient gap between them for the finished potato to fall through. Pref. two series of such discs, mounted side by side to form two grooved rollers, are used.
