Abstract

Prodn. of ethanol from Jerusalem artichoke tubers is carried out by (a) steeping the tubers in water to extract sugars and salts by dialysis through the cell membranes, (b) decolourising the extract with H2SO3 or Ca bisulphite, (c) fermenting the extract, and (d) distilling the fermented liquor (contg. 3-15% alcohol) to produce 96-97 deg. proof alcohol. The product can be used as a fuel in gasoline or diesel engines.
