Abstract

Procédé pour la fabrication du sérac, et machine pour la mise en oeuvre du procédé. Dans un caisson profilé en U, l'on prévoit la formation en continu du sérac grâce à l'introduction en continu du sérum et du liquide coagulant à une température préétablie, dans ce caisson étant prévues deux bandes, l'une d'enlèvement et l'autre de transfert du sérac à un endroit de déchargement. L'invention trouve une application dans la fabrication automatique de fromages, et notamment du sérac.
