Abstract

Cheese curds are produced continuously in a trough with a moving belt running over its base. The trough is divided into an inlet zone (I), settling zones coagulating zone C, and cutting zone. Curdled milk is fed in via a pipe into the inlet zone. This is partitioned from the settling zone by a screw feeder which rotates at a speed equivalent to the motion of the belt. The settled curds then pass into the coagulating and finally the compacted, friable mass is fed by a screw feeder into a cutter to produce the curd product. The trough is inclined at both ends, and has a fixed wall at one end. Used in continuous cheese prodn. conventional plant can use vertical or horizontal plant can use vertical or horizontal machines. Both suffer from the problem of wall effects which create turbulence in the cheese curd and cause premature clotting and not the smooth friable material required. The use of screws or the like is known as is the use of moving walls. rather on their own presents the complete soln. but in combination they give greatly improved quality.
