Abstract

Procédé pour retourner des fromages moulés, notamment de grande surface, et moule à fromage correspondant. A l'intérieur du moule est prévu un fond mobile 20 sur lequel repose le fromage 35. Avant le retournement, on relève le fond mobile 20 à l'aide de pièces d'entraînement 25 extérieures à la virole jusqu'à amener la face supérieure du fromage contre le fond 13 du moule situé au-dessus. Le fromage, étant maintenu sur toutes ses faces, peut être retourné sans dommage. Application à la fabrication de fromages à grande surface, tels que Brie.
