Abstract
Procédé de cuisson d'oeufs brouillés en quantités dosées dans lequel : a. On casse un nombre déterminé d'oeufs crus dans un récipient 26, caractérisé en ce que : b. On introduit à l'intérieur de la masse d'oeufs des jets de vapeur 110 en des emplacements fixes et espacés, la vapeur étant dispersée dans cette masse de manière à agiter et chauffer cette dernière et à obtenir une masse d'oeufs brouillés pratiquement homogène, uniformément cuite, ayant pris du volume, légère, moelleule et agréable d'apparence et au goût. Application culinaire.
