Abstract
Procédé et dispositif d'introduction d'une poudre dans une viande ou un poisson à conserver par salaison. Une aiguille creuse 12 raccordée à une source de gaz sous pression et à un réservoir de poudre de sel 18 peut être soulevée et abaissée au-dessus d'un socle 1 destiné à recevoir le corps à traiter (viande ou pisson), ces mouvements de l'aiguille pouvant être effectués au moyen d'un guidage, 3, 4 et d'un système de commande 5, 8. Une fois que l'aiguille a été introduite dans la viande, on la remplit de sel en poudre, on applique la pression gazeuse et on retire l'aiguille; la poudre reste dans la viande. Application à la salaison de viandes ou poissons.
