Abstract
L'invention concerne un nouveau produit alimentaire à base d'extrait protéique du lait. Selon l'invention, ce produit est caractérisé en ce qu'il est constitué d'extraits protéiques de lait, débarrassé de ses sels minéraux, d'une part, et d'une substance alimentaire hydrocarbonée à propriétés gustatives choisi dans la famille comportant les glucides et les farines d'autre part; ces deux composants sont à l'état sensiblement anhydre et sous forme de poudre, réduite à une granulométrie extrêmement fine, telle que les grains ne soient pas discernables à la dégustation et ces deux eléments composants sont enrobés dans un troisième composant formant un agent de texturation alimentaire et constitué d'un corps gras, les deux premiers éléments à l'état pulvérulent étant en dispersion dans ledit corps gras. L'invention concerne également un procédé de fabrication d'un tel produit. Application à la réalisation d'un produit alimentaire concentré; solide, homogène et apte à la conservation.
