Abstract

L'invention concerne un procédé de fabrication de fromage affiné ayant une teneur accrue en protéines du petit-lait. Selon l'invention on ajoute au lait des protéines du petit-lait ainsi que des protéines de la caséine. Le procédé permet d'obtenir des fromages ayant le goût habituel mais dont la teneur en protéines a été augmentée.
