Abstract

For the prepn. of cheese powder suitable both for human and animal consumption, an insoluble para-casein gel intermediate suspn. is used. This is obtd. by processing cheeses, including sheep's-cheese. The fat content of the suspn. is adjusted below 30 wt.% by the addn. of skimmed milk or whey powder. - Viscosity of suspn. is adjusted with water, at 80-85 deg.C to 2.5-3.0 kPa.s. Following this, 0.3-0.8% of heat stabilizing mixt. of phosphates is added, together, as in this case, with colours and flavours. The homogenized mix is spray-dried at 175-195 deg.C entry and 80-90 deg.C exit temps.
