Abstract

Procédé de traitement et de conditionnement de pommes de terre épluchées. On plonge ces dernières dans trois bains successifs contenant respectivement : a. 0,2 à 4 % d'acide citrique et 0,005 à 0,8 % de dioxyde de soufre, b. 0,5 à 1,5 % de pyrophosphate de sodium ou de potassium, et c. 0,05 à 0,5 % d'un sel de métal alcalino-terreux, puis on place les pommes de terre dans des récipients souples que l'on scelle, après y avoir établi une faible pression d'un gaz inerte, on scelle les récipients et on les stérilise à chaud. Ce traitement permet de maintenir les qualités organoleptiques des pommes de terre en conserve, spécialement si ces dernières ont d'abord subi un entreposage prolongé à basse température.
