Abstract

Wood-fired cooking oven, suitable for pizzas, bread, meat etc., consists of a furnace arch associated with an inlet block cast in one piece from refractory concrete. The block includes an external hood and an internal slit for smoke removal when the oven door is closed. The arch is in the form of a dome and is made from curvilinear trapezoidal sections held together by mortise joints and a keystone at the summit. a monolithic inlet block, cast from refractory concrete, is bedded on the horizontal base slab and includes the mouth of the oven, an external hood for smoke evacuation and an internal slit for the same purpose when the oven door is closed. The whole assembly is mounted on the hearth. The oven assures a uniform draught and yield both of which were hitherto uneven.
