Abstract

Procédé pour utiliser les solutions résiduaires contenant du lactose et autres matières contenant des sucres et des polyglucides. Dans une première phase de traitement l'amidon est converti en dextrines et le lactose est transformé en acide lactique par fermentation sous l'action de bactéries lactiques, de l'ammoniaque étant ajouté, puis, en une seconde phase la suspension d'acide lactique est utilisée pour la culture de levures, les dextrines étant hydrolysées sous l'action d'amylases. Le produit obtenu est utulisé comme source de protéines et vitamines pour l'alimentation.
