Abstract

Huile de palme soumise à un fractionnement en deux étapes dans un système exempt de solvant en utilisant un chauffage et un refroidissement contrôlés pour produire une fraction intermédiaire d'indice d'iode de 48-53 et de point de fusion de 32-38 degrés C. On soumet ensuite la fraction intermédiaire séparée à une hydrogénation partielle pour réduire sa teneur en acide linoléique à moins de 2% ou, de préférence, on y incorpore 0,01-1,5 % en poids d'une gomme comestible sèche, par exemple un mélange de gommes guaranate et carraghenate. Ce traitement par des gommes transforme cette fraction intermédiaire en un solide dimensionnellement stable qui peut être coulé ou moulé et être utilisé pour allonger le beurre de cacao en quantités de 30 % ou plus sans affecter de façon défavorable la courbe de refroidissement de Jenson. Application à l'industrie de la confiserie.
