Abstract
Préparation de protéines alimentaires fonctionnelles à partir de levures. On obtient des produits du type protéines fonctionnelles de levures, possédant de remarquables caractéristiques (aptitude à la formation de gels sous l'effet de la chaleur, aptitude à la formation de mousses, solubilité, fouettabilité), en effectuant une extraction alcaline de cellules de levure (telle que Candida utilis), une telle extraction étant précédée d'une extraction à l'eau chaude et/ou d'une extraction à l'aide d'une solution alcaline diluée. Obtention de produits relativement peu coûteux, pouvant être disponible en quantités pratiquement illimitées, qui sont de bons succédanés de la caséine, du caséinate de sodium, du blanc d'oeuf, et qui sont utilisables aussi dans des boissons protéinées acides stabilisées.
