Abstract

Tartar is eliminated from wine, sparkling wine and other drinks contg. tartaric acid by (a) supersaturating the drink with dissolved tartar, (b) cooling to a temp. between below the storage temp. and the lowest probable transport temp., then (c) sepg. the crystallised tartar. Process is effected in an appts. comprising a conduit from the drinks storage to an entry point for the dissolved tartar, followed by means of cooling and sepn. The cooling may also be carried out in a separable vessel in a discontinuous process. Process avoids future pptn. of tartar from the drinks. It is simple and quick and may be carried out continuously or discontinuously.
