In de-sulphiting fruit juices, sulphur dioxide is first eliminated by fixing it with an absorbent substance, the naturally occurring aromatic compounds separated from the sulphur dioxide after its absorption are condensed, and the condensed aromatic compounds are restored to the fruit juice under treatment. Heated fruit juice is de-sulphited in a tank 3 by an inert gas circulated by a pump 18 to a bubbler 20; the sulphur dioxide driven off is fixed by an absorbent substance in a vessel 5 while aromatic compounds are condensed in condensers 7, 10, and incorporated in the de-sulphited juice flowing in the pipe 12.
