Abstract

In preparing concentrated fruit juice by evaporating off water, a small amount of fresh fruit juice which has been subjected to an inert gas-stripping operation for removal of oxygen, is added and blended with the concentrated juice to restore its flavour, and the resulting blended juice is subjected to a flow of inert gas to prevent oxygen contamination.
