Abstract

L'invention concerne un procédé d'emballage d'une volaille fraîchement abattue destinée à être conservée à des températures inférieures à la température ordinaire pendant plusieurs jours. La volaille fraîchement abattue est nettoyée, éviscérée et emballée, tout cela à l'abri de l'air et sans refroidissement au-dessous de la température vitale, la volaille ou le morceau de volaille emballé sous vide n'étant réfrigéré qu'après avoir été emballé à l'abri de l'air. Cette précaution maintient une teneur en humidité faible d'environ 3 % au moins dans la volaille, conserve le produit propre à la consommation et sans odeur après un stockage de plusieurs jours.
