Abstract

Milk product consists of a mixt. of dried milk and multi-unsaturated fatty cpds. (pref. added in an amt. of 10-40 wt. %), pref. a vegetable oil contg. less than 4 wt. % (pref. 1-3 wt. %) of saturated fatty cpds. have been removed (at least partly.) Thus, the compsn. contains more unsaturated fatty cpds. and less saturated fatty cpds. than the cow milk. The product can be mixed with water to obtain a milk substitute. It can also be used in ice cream, milk-shakes, modified yoghurt, etc. The product has reduced cholesterol content (0.01%). Formation of further cholesterol in the organism is suppressed because its source, i.e. saturated fatty cpds., is largely eliminated.
