Abstract

Wine in a process vat, esp. red wine being subjected to malolactic fermentation, is heated by drawing from top of vat, rapidly pumping through a recycling external electric heater, and returning near base of vat, so that contents are blended convectively. The heater is pref. cylindrical and horizontal, and contains hairpin, e.g. copper, tubes, holding carbon elements. It is controlled automatically by a pressure-stat, which initiates heating when heater is full; and includes a thermostat at the inlet, which cuts current to elements, when heated as a result of circulation failure. Caramelization, by local overheating, is obviated and the vat contains no mechanical or control devices. The heater and pump may be coupled by flexible pipes, and mounted on a mobile trolley.
