Abstract

Sweets, which may be chewed, sucked or crushed, contain 0.5 - 2% of ginger powder. Caramels are made from 1 kg. of crystallised sugar, 0.32 kg. of crystal glucose, 0.2 kg. of honey, 0.2 kg. of butter (alone or with margarine) 12 c.l. of milk, pinch of salt, 0.5-2% of ginger powder, with optional additions of walnuts, hazelnuts or almonds, and 0.1-0.2% of lecithin. The sweets have a piquant and hot flavour which soothes the taste and stimulates the salivary glands.
