Abstract

The carcase is hung by the hind legs and the front legs chain tethered to an anchor rail parallel to the hanging rail, the hide being preflayed away from the belly, inside of the legs and the neck. A chain or cable anchored at one end is hooked at the other end into the scruff of the neck and passes over a drum parallel to the above rails and suspended from two Vee cables shackled, at the ends nearest the carcase, to upper beams and with the other ends passed over idlers to a winch. Bacterial contamination of the carcase meat is reduced.
