Abstract

Cooled, frozen or deep-frozen must is added to the wine for its second fermentation. Natural products thus replaced added sugar and yeast. A better quality wine is produced. The must may be prepd. by cooling fruit juice (esp. grape). Pref. enough must is added to give 1-100 g/l. sugar.
