Claims (5)
1. Förfarande för framställning av ett flytande pälägg med läg fetthalt, säsom ett pälägg med smörsmak, kanne- 5 tecknat därav, att en oija-i-vatten-emulsion fram- ställs genom blandning av en dispergerad fas som bestär 5-40% av fett, beräknat pä vikten av emulsionen, vilket fett har en SFI-profil (profil av solid-fett-index) inom följande grän-ser: 10 10°C - 0-35 % 21°C - 0-25 % 33°C - < 8 % med en kontinuerlig vattenfas som innehäller ett stabili-seringsmedel och ett emulgeringssystem som bestär av en 15 kombination av en lipofilisk emulgator och en hydrofilisk emulgator, varvid emulgeringssystemet är närvarande i en mängd av 0,1 - 4,0 %, beräknat pä totalvikten av pälägget, och bäda av de lipofiliska och hydrofiliska emulgerings-medlen är närvarande i mängder av minst 0,025 % pä total-20 vikten av pälägget och de relativa mängderna och totala mäng-derna av emulgeringsmedlen och stabiliseringsmedlet är i ständ att ästadkomma en stabil emulsion och en produkt som är flytande vid ca 4°C; och emulsionen homogeniseras vid en temperatur av 43-88°C, varvid erhälls en stabil produkt som 25 är flytande vid ca 4°C.
2. Förfarande enligt patentkravet 1, känneteck-n a t därav, att fettet bestär 10-30 % av päläggets total-vikt.
3. Förfarande enligt patentkravet 1 eller 2, k ä n n e -30 tecknat därav, att fettet bestär av en vegetabilisk oi ja.
4. Förfarande enligt nägot av patentkraven 1-3, k ä n -netecknat därav, att det lipofiliska emulgerings-medlet och de andra fettlösliga komponenterna blandas med 35 fettet vid en temperatur som är effektiv för att ästadkomma en jämn blandning, före framställning av emulsionen.
