Abstract

1335502 Frozen confection stabilising, TOPSCOR PRODUCTS Inc 10 Jan 1972 1222/72 Heading A2B In the production of frozen confections there is employed a stabiliser-emulsifier system which exhibits improved stabiisation without material increase of viscosity of the mix, said system comprising a stabilising gum selected from guar gum, locust bean gum, and sodium carboxymethyl celulose, being coated with an emulsifier consisting of essentially fully saturated monoglycerides together with a substance selected from polyoxyethylene sorbitan tristearate and polyoxyethylene sorbitan monooleate, the emulsifier being 15-50 wt. % of the gum, and the monoglyceride : sorbitan ester ratio being 10:1-1:1 by weight.
