Abstract

Un procedimiento para obtener alimentos vegetales deshidratados en trozos con tiempos de preparación reducidos, por incorporación de al menos una sustancia capaz de formar complejos con iones metálicos polivalentes (agente formador de complejos), especialmente un citrato, que pueden prepararse para consumo introduciéndolos en un medio rehidratante acuoso caliente, especialmente hirviendo, y dejándolos reposar brevemente durante no más de unos 5 minutos (vegetales deshidratados instantáneos), a partir de vegetales o trozos de vegetales frescos o secados en origen, por impregnación con una disolución acuosa que contiene al menos un agente formador de complejos y secado, caracterizado porque, antes de secar los alimentos vegetales preparados del modo conocido, (a) se remojan opcionalmente en un medio líquido acuoso, (b) se someten a precocción en un medio líquido y/o de vapor que contiene agua, y (c) se enfrían a una temperatura de alrededor de 50ºC como máximo, con la condición de que al menos una de las operaciones de tratamiento (a) a (c) se efectúa en presencia de una disolución impregnadora acuosa que contiene el (los) agente(s) formador(es) de complejo(s).
