Abstract
Procedimiento para el enriquecimiento progresivo en azucares y reciclado de salmueras usadas en la conversación de frutas, en particular con el objeto de confeccionar confitura con éstas, caracterizado porque después de haber efectuado la separación de las salmueras enriquecidas en azúcares de las frutas tratadas con ellas, se reintroducen directamente en el dispositivo de preparación de salmuera, sometiendolas eventualmente a un tratamiento de decoloración previo y de inhibición de las encinas, así como a un refuerzo de su concentración en productos de preparación en salmuera necesarios en otra etapa del proceso de conservación en salmuera necesarios en otra.
