Abstract

Método para preparar alimentos que contiene proteínas que se coagulan durante el calentamiento y comunican consistencia dura al producto caracterizado por las siguientes etapas: bombear y dar a una pasta del producto la forma de una masa de extrusión que se desplaza hacia adelante y está encerrada en un tubo transparente a las microondas, exponer la masa de extrusión a microondas, en al menos un aplicador TM021, y descargar del tubo y transportar la masa extruida en estado sólido.
