Process for the preparation of a sweet base for gum containing fat, solid milk cocoa powder, and an aqueous solution of sugar in such proportions that part of the sugars, including the milk sugars, are crystallized, which process comprises the following steps: (I) dissolving at least the milk proteins in aqueous phase at a temperature of 50 to 80ºC and at a ph of 6 to 8; (II) add the other ingredients and emulsify the dough; (III) acidifying the aqueous phase or the obtained emulsion until reaching a ph value of 5 to 6; (IV) cooling to a temperature comprised between 10 and 25ºC and homogenizing the product obtained to obtain a particle size of the undissolved milk sugar particles of 0.5 to 50 microns.
