Abstract

Procedure for the formation of stable emulsions useful in the preparation of food products, from liquid fat, particular acidic lipids, water, thermally denaturable water soluble protein and a polyvalent metal ion salt, characterized in that it comprises: (1) Form an oily phase consisting essentially of: (a) a liquid fat; (b) 0 to 4% by weight of the oil phase, of an oil soluble polyvalent metal ion salt; and (c) 0.1 to 10% by weight of the oil phase of an acidic lipid selected from the group consisting of: (i) Saturated and trans-unsaturated fatty acids containing 12 to 22 carbon atoms or salts soluble in oil thereof; (ii) condensation products of mono- and/or diglycorides of fatty acids, straight chain diol monosters, the fatty acid being saturated or trans-unsaturated, with polycarboxylic acids having 0 to 4 hydroxyl groups, said product having condensation of at least one free carboxyl group per molecule; (iii) condensation products of saturated or trans-unsaturated fatty acids containing 12 to 22 carbon atoms, with polycarboxylic acids having 1 to 4 hydroxyl groups, said condensation products having at least one free carboxyl group per molecule ; (iv) condensation products of saturated or trans-unsaturated straight chain fatty alcohols, containing 12 to 22 carbon atoms, with dicarboxylic acids containing 3 to 6 carbon atoms; said condensation products having at least one book carboxyl group per molecule; (v) fatty acid chlorides having 12 to 22 carbon atoms; (vi) Fatty alkyl or trans-fatty alkenyl gallates, having a chain length of C12 to C22; (2) forming an aqueous phase comprising (a) water; (b) 1.0 to 50% by weight of the aqueous phase of a thermally denaturable water soluble protein; (c) 0 to 6% by weight of a water-soluble polyvalent metal ion salt; (3) mixing the oil phase and the aqueous phase in a weight ratio of oil phase to aqueous phase of 4: 1 to 1:10, said emulsion containing from 0.002 to 54% by weight of polyvalent metal ion salt, at provided that when the acidic lipid is a fatty acid chloride, the polyvalent metal ion salt may be omitted; and (4) heating said emulsion to a temperature above 40ºC for a period of time sufficient to heat-set said emulsion.
