Abstract

A process for the preparation of a spillage margarine, by emulsification of 10 to 25% by weight of an aqueous phase with 90 and 75% by weight of a fatty phase, whose process is characterized in that a fatty phase consisting essentially of oils is used liquids that are spillable at all temperatures from 5º to 35ºC to which a small amount of a surfactant has been added, which is prepared by reacting 80-92 parts by weight of a polycondensate aliphatic hydrocarboxylic acid initially containing 12 to 20 carbon atoms, the polycondensate of which has an acid number of not more than 70, with 8-20 parts by weight of a polycondensate aliphatic polyhydric alcohol containing initially 3 to 6 carbon atoms, at a temperature between approximately 180º and 210ºC, until the acid number of the reaction mixture drops to a value less than 10.
