Abstract

1359639 Pourable margarine UNILEVER Ltd 9 Nov 1971 [13 Nov 1970] 54119/70 Heading C5C A pourable margarine comprises 10 to 25 wt. per cent of aqueous phase and 90 to 75 wt. per cent fatty phase which comprises (a) a liquid oil which is pourable at all temperatures from 5‹ to 35‹ C. and (b) 0À5 to 2À5 wt. per cent of the fatty phase of a surface active agent prepared by reacting (1) 80 to 92 parts by wt. of a polycondensed hydroxy-monocarboxylic acid initially having 12 to 20 C atoms and an acid no. of #70, with (11) 8 to 20 parts by wt. of a polycondensed aliphatic polyhydric alcohol initially having 3 to 6 C atoms, at a temperature between 180‹ and 210‹ C. until the acid value of the mixture drops to <10. The liquid oils used are sunflower oil containing about 60% linoleic acid or in addition 2À5% of fatty hydrogenated rapeseed oil. The hydroxy-monocarboxylic acids are rincinoleic acid, mono or dihydroxy stearic acid or oxidation products of palmitoleic or linoleic acids. The polyvalent alcohols are polyglycerols, polyerythritols, polypentaerythritols or polymannitols. A hydrophilic emulsifier, e.g. Na or K oleate, or a phosphatide may be present in the aqueous phase.
