Abstract

Receta y método para la elaboración de una bebida a base de café con leche con los siguientes ingredientes: leche, agua, azúcar, café, estabilizante y regulador de acidez. Se puede añadir un ingrediente a base de cacao.#Por cada aproximadamente 100 unidades de peso de la bebida se encuentran entre 50 y 90 unidades de dicha leche estandarizada con contenido en peso de entre un 2% y un 3% de materias grasas y entre un 0,5% y un 3% de café liofilizado.#Se recepciona la leche (1), se somete a una termización y desnatado (2) y se estandariza (3) con un contenido en peso de entre 2 y 3% de materias grasa. Se adicionan (4) a la leche los ingredientes anteriores. A continuación se realiza un tratamiento térmico UHT y se homogeniza la mezcla (5). Finalmente el producto obtenido se envasa (6) y se almacena (7).
