Supervivencia bajo estrés oxidativo
5 Se ensayó el efecto de 99 cepas de bacterias acidolácticas sobre la supervivencia en estrés oxidativo con H2O2 2, 3 y 5 mM. En la presencia de H2O2 5 mM, la viabilidad en la presencia de E. coli OP50 fue de aproximadamente el 93 % en comparación con la ausencia de estrés. Esto es indicativo de un 93 % de protección frente al estrés oxidativo. La siguiente Tabla 2 muestra el efecto de las bacterias acidolácticas seleccionadas sobre la protección frente al estrés oxidativo, mostrándose el efecto protector ejercido por la E. coli OP50 del control al 100 % como
