Abstract
Procedimiento de obtención de un producto en forma de gránulos, partículas o bolas ultracongeladas densas, ricos en gases disueltos, a partir de una matriz líquida, semilíquida o pastosa, constituido por dos etapas consecutivas: - una etapa de gasificación de la matriz por inyección de gas a una presión comprendida entre 2 y 10 bares, con el fin de disolver el gas en la matriz, siendo esta etapa de gasificación realizada con nitrógeno, protóxido de nitrógeno o un gas raro como el argón, - una fase de ultracongelación rápida de la matriz que contiene el gas disuelto por fluido criogénico a una presión superior a 2 bares.
