Abstract

Método para la conversión enzimática de naringina que comprende el tratamiento de jugos que contengan naringina con una preparación encimática que contenga naringinasa hasta que (a) se efectúe la conversión esencialmente completa en pruninaen cuyo casola reacción tiene lugar en presencia de un compuesto auxiliartal como se ha definido aquelquese halla disponible en una cantidad suficiente para evitaresencialmentela conversión de prunina en raringeninao (b) hasta quepor lo menosel 15% de narangenina se convierte en prunina y antes de la conversión completa de la última en naringeninaquedando en la mezcla de reacción una cantidad de prunina que sea equivalentepor lo menos al 15% de la naringina original.
