Secuencia aminoácida apta para afectar la actividad enzimática de pectín metilesterasas (PME) y secuencia nucleótida para enzimas que afectan pectín metilesterasas comprendiendo dicha secuencia aminoácida. La secuencia aminoácida tiene la fórmula: A1-A2-A3- A4-A5-A6-A7-A8-A9-A10-A11-A12-A13-A14-A15-A16-A17-A18-A19-A20- A21-A22 siendo: A1: un aminoácido hidrofóbico o polar o neutral, A2, A3, A8, A21: aminoácidos hidrofóbicos, A4, A6: aminoácidos polares, A5, A17: aminoácidos polares o cargados o neutrales, A7, A12, A15, A18: aminoácidos hidrofóbicos o polares o cargados, A9, A10, A20, A22: aminoácidos hidrofóbicos o polares, A11: un aminoácido cargado, A13: un aminoácido hidrofóbico o cargado o neutral, A14, A16: aminoácidos hidrofóbicos o polares o cargados o neutrales, A19: un aminoácido polar o neutral. Pectín metilesterasas modificadas, genes que las codifican, su utilización y productos alimenticios preparados mediante dichas secuencias aminoácidas.
