Abstract

La invención se refiere a soja (por ejemplo Glicina max L. Merr) que contiene un nuevo determinante genético que conlleva una reducción de la producción de ácido linolénico en el aceite vegetal con formación endógena de granos. Este determinante genético es el par de genes recesivo homocigoto fan3fan3 que se ha descubierto que es susceptible de formación por mutagénesis. Una vez formado, dicho determinante puede transferirse fácilmente en otras líneas y cultivares de soja donde se expresa de manera similar y de manera fiable en condiciones convencionales de cultivo. En la variante preferida, la planta de soja presenta la presencia combinada de los pares de genes recesivos homocigotos fan1(A5)fan1(A5(), fan2fan2, así como la fan3fan3 que conlleva una reducción de la producción de ácido linolénico en los granos. Esta expresión inusualmente baja de la producción de ácido linolénico en el aceite vegetal no sobrepasa el 1,3% en peso y aún mejor el 1,1, % en peso del contenido totalde ácidos grasos. Se puede así obtener en estas condiciones un aceite vegetal que se presta particularmente bien a la freidura sin recurrir a la hidrogenación.
