EL PROCESO ENVUELVE EL SANEADO DE LA SUPERFICIE EXTERIOR DE LA FRUTA, EXTRACCION DEL ZUMO DE LA PARTE COMESTIBLE DE LA FRUTA, GASIFICACION DEL ZUMO CON UN GAS MEZCLA QUE CONTIENE OXIGENO, QUE CONTIENE DIOXIDO DE CARBONO, RELLENANDO EL RECIPIENTE DE BARRERA DE GAS SUPERIOR CON EL ZUMO; CERRANDO HERMETICAMENTE EL RECIPIENTE Y ENFRIANDO RAPIDAMENTE EL ZUMO EN EL RECIPIENTE.
