UN NUEVO PROCESO PARA PRESERVAR LA CALIDAD DE LOS ATRIBUTOS Y ACIDO ASCORBICO CONTENIDO EN ZUMOS DE FRUTA FRESCA Y MEZCLAS DE ZUMO DE FRUTA. EL PROCESO ENVUELVE EL SANEADO DE LA SUPERFICIE EXTERIOR DE LA FRUTA, EXTRACCION DEL ZUMO DE LA PARTE COMESTIBLE DE LA FRUTA, GASIFICACION DEL ZUMO CON UN GAS MEZCLA QUE CONTIENE OXIGENO, QUE CONTIENE DIOXIDO DE CARBONO, RELLENANDO EL RECIPIENTE DE BARRERA DE GAS SUPERIOR CON EL ZUMO; CERRANDO HERMETICAMENTE EL RECIPIENTE Y ENFRIANDO RAPIDAMENTE EL ZUMO EN EL RECIPIENTE. ALTERNATIVAMENTE, EL ZUMO EXTRAIDO PUEDE SER RELLENADO DENTRO DEL RECIPIENTE DE BARRERA DE GAS SUPERIOR Y LUEGO SE GASIFICA ANTES DE CERRAR HERMETICAMENTE EL RECIPIENTE.
