PRODUCTO ALIMENTICIO HELADO Y PROCEDIMIENTO PARA OBTENCION DEL MISMO. A PARTIR DE UNA MEZCLA APROPIADA, DE LAS QUE COMUNMENTE CONSTITUYEN UN HELADO O SORBETE, DEBIDAMENTE CONFIGURADA, ESTE NUCLEO DE HELADO INCORPORA UN FINO RECUBRIMIENTO A BASE DE UNA MEZCLA DE GELATINA, AZUCAR, JARABE DE GLUCOSA Y AGUA, CON UN PUNTO DE FUSION BASTANTE MAS ALTO QUE EL DEL HELADO Y QUE ACTUA COMO PROTECTOR QUE EVITA SU DESCONGELACION ANTE EL CONTACTO CON LOS DEDOS DE LA MANO DURANTE SU CONSUMO. LA GELATINA SE HIDRATA EN PARTE DEL AGUA A 70G, PARALELAMENTE EL AZUCAR SE DISUELVE EN EL AGUA RESTANTE, A TEMPERATURA DE EBULLICION, SEGUIDAMENTE AL AZUCAR DISUELTA SE AÑADE EL JARABE DE GLUCOSA Y LA GELATINA HIDRATADA, SE DEJA REPOSAR HASTA UNA TEMPERATURA DE 60-65G Y SE AÑADEN ADITIVOS TALES COMO ACIDO CITRICO, COLOR Y AROMA. ESTE PRODUCTO SE MOLDEA Y CONGELA, EN SU SENO SE DEPOSITA LA DOSIS CORRESPONDIENTE DEL HELADO CONSTITUTIVO DEL NUCLEO, Y CON LA INSERCION DEL CORRESPONDIENTE PALITO O SOPORTE EL PRODUCTO QUEDAACABADO, RESULTANDO SU COBERTURA TRANSPARENTE E IRROMPIBLE.
