Claims (12)

  1. Dispositif (10) pour trancher des produits alimentaires, en particulier trancheuse à haute performance,
    comportant une zone de travail qui comprend une zone de coupe (11) et une zone de transport (13) ayant une alimentation en produits (15), dans lequel
    l'alimentation en produits (15) amène les produits (17) à trancher à la zone de coupe (11) sur une ou plusieurs pistes, et une lame de coupe (21) se déplace, en particulier en rotation et/ou en révolution, dans un plan de coupe (19) à l'extrémité de la zone de coupe (11),
    il est prévu moyen de transfert (37) à l'aide duquel les produits (17) sont transférés vers l'alimentation en produits (15) et qui comprend un support de produits pivotant (39) qui, dans un état pivoté vers le bas, reprend les produits (17) à trancher depuis un moyen de transport (41) de la zone de transport (13), et qui, dans un état pivoté vers le haut, constitue un support de produits, conjointement avec un transporteur avant (61), en particulier avec une bande transporteuse ou un support glissant passif, sur lequel les produits (17) reposent pendant l'alimentation vers la zone de coupe (11), et comportant un moyen de balayage fonctionnant sans contact pour détecter au moins une partie du contour extérieur des produits (17) à trancher, caractérisé en ce que
    le moyen de balayage pour la détection des contours comprend au moins un capteur compact (23) disposé dans la zone de travail (11, 13), qui est disposé dans un propre boîtier de capteur fermé (25) et qui définit à l'intérieur de la zone de travail (11, 13) une zone de balayage (27) pour les produits (17) qui se trouve à l'extérieur du boîtier de capteur (25), et en ce que le capteur compact (23) est disposé dans ou au niveau de la zone de coupe (11) ou dans la zone de l'alimentation en produits (15).
  2. Dispositif selon la revendication 1,
    caractérisé en ce que
    le boîtier de capteur (25) est réalisé de manière à satisfaire à une classe de protection nationale ou internationale normalisée, selon laquelle l'étanchéité à la poussière, la protection complète contre le contact et la protection contre l'eau, dans le cas d'un nettoyage à haute pression/jet de vapeur, sont assurées, en particulier de manière à satisfaire à la classe de protection IP6K9K ou IP69 selon la norme DIN 40 050 partie 9 ou DIN EN 60529, ou à une classe de protection équivalente.
  3. Dispositif selon la revendication 1 ou 2,
    caractérisé en ce que
    le capteur compact (23) comprend un émetteur (29) pour émettre un rayonnement de balayage dans une zone de balayage (27) et un récepteur (31) pour recevoir le rayonnement de la zone de balayage (27), l'émetteur (29) et le récepteur (31) étant disposés dans un boîtier de capteur commun (25) du capteur compact (23), et/ou en ce que
    le capteur compact (23) émet un rayonnement laser et est réalisé de manière à satisfaire à une classe de protection laser nationale ou internationale normalisée, selon laquelle le rayonnement laser est inoffensif pour l'œil humain, en particulier de manière à satisfaire à la classe de protection laser 1 ou 2 selon la norme DIN EN 60825-1, ou à une classe de protection laser équivalente.
  4. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    le capteur compact (23) est réalisé pour émettre un rayonnement de balayage dans un plan de balayage (33), et/ou en ce que un plan de balayage (33) du capteur compact (23) s'étend au moins sensiblement perpendiculairement ou selon un angle supérieur à environ 45° par rapport à une direction de mouvement des produits (17) à travers le plan de balayage (33), et/ou en ce que
    le capteur compact (23) est réalisé sous forme de scanner laser, et/ou en ce que
    le capteur compact (23) fonctionne selon la méthode de la section lumineuse, et/ou en ce que
    le capteur compact (23) est réalisé pour générer une ligne sur un produit à balayer (17) au moyen d'une source lumineuse (29) et pour enregistrer une image contenant la ligne au moyen d'une caméra (31).
  5. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    le capteur compact (23) est soutenu ou maintenu sur un cadre porteur ou sur un bâti (35) du dispositif, portant également la zone de coupe (11) et la zone de transport (13), et/ou en ce que
    le capteur compact (23) est disposé dans la zone d'une butée de produits avant (16) de l'alimentation en produits (15), en particulier dans la direction d'alimentation à une distance d'environ 5 à 20 mm d'un plan de butée de la butée de produits (16), et/ou en ce que
    le capteur compact (23) est disposé dans la direction d'alimentation à une distance d'environ 30 à 400 mm du plan de coupe (19), et/ou en ce que un plan de balayage (27) du capteur compact (23) s'étend au moins sensiblement parallèlement ou selon un angle inférieur à environ 45° par rapport au plan de coupe (19).
  6. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    différentes positions de balayage pour le capteur compact (23) sont définies dans la zone de travail (11, 13), les positions de balayage appartenant en particulier à un emplacement de balayage commun (A, B, C, D, E), en particulier les positions de balayage se distinguant les unes des autres en ce qui concerne leur configuration dans la direction de transport des produits (17) et/ou en ce qui concerne leur configuration autour de la direction de transport, et/ou en ce que
    le capteur compact (23) est réglable et/ou convertible entre les positions de balayage.
  7. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    plusieurs pistes de produits parallèles du dispositif sont simultanément couvertes par ledit au moins un capteur compact (23).
  8. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    plusieurs capteurs compacts (23) sont disposés à un emplacement de balayage (A, B, C, D, E) pour la détection commune des contours, et/ou en ce que
    à un emplacement de balayage (A, B, C, D, E), le balayage est effectué par au moins deux capteurs compacts (23) de manière décalée dans l'espace et/ou dans le temps, et/ou en ce que
    à un emplacement de balayage (A, B, C, D, E), le balayage est effectué par deux capteurs compacts (23) orientés à l'opposé l'un de l'autre.
  9. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    le moyen de balayage est réalisé pour effectuer une ou plusieurs tâches supplémentaires en détectant au moins un contour, appartenant à au moins une unité fonctionnelle (49) du dispositif, à l'aide du capteur compact (23).
  10. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    il est prévu un moyen de commande (51) qui est réalisé pour calculer des données de commande en utilisant des contours de produit détectés et pour faire fonctionner le dispositif, en particulier l'alimentation en produits (15), en utilisant les données de commande, en particulier pour obtenir des tranches de produit (53) ou des portions (55) de tranches de produit (53) à poids constant.
  11. Procédé pour trancher des produits alimentaires à l'aide d'un dispositif selon l'une des revendications précédentes,
    dans lequel
    au moins une partie du contour extérieur des produits alimentaires (17) à trancher est détectée,
    le contour est détecté à l'intérieur du dispositif de tranchage (10) à l'aide du capteur compact (23) fonctionnant sans contact du moyen de balayage, le contour des produits (17) est détecté respectivement après que le produit (17), qui a été précédemment comprimé à la suite d'une opération de préhension dans l'alimentation en produits (15), se soit à nouveau détendu au moins partiellement, et/ou
    le contour des produits (17) est détecté respectivement après une opération de préhension dans l'alimentation en produits (15), du fait que tout d'abord, pendant une phase d'avance rapide vers le plan de coupe (19), une section de produit avant est balayée à une vitesse d'avance relativement plus rapide et ensuite, pendant une phase d'avance de coupe à travers le plan de coupe (19), la section de produit restante est balayée à une vitesse d'avance relativement plus lente, à l'aide du capteur compact (23).
  12. Procédé selon la revendication 11,
    caractérisé en ce que
    des données de commande sont calculées en utilisant des contours de produit détectés, et le dispositif de tranchage (10), en particulier l'alimentation en produits (15), est exploité en utilisant les données de commande, en particulier pour obtenir des tranches de produit (53) ou des portions (55) de tranches de produit (53) à poids constant, et/ou en ce que une ou plusieurs tâches supplémentaires sont effectuées à l'aide du moyen de balayage en détectant au moins un contour, appartenant à au moins une unité fonctionnelle (49) du dispositif, à l'aide du capteur compact (23).
