Die Erfindung betrifft eine Backplattenanordnung für einen Waffelbackautomaten mit zwei schwenkbar miteinander verbundenen Backplatten, wobei mindestens eine Backplatte jeweils bezüglich einer Backfläche konvex vorgespannt ist, so dass bei geschlossener Backplattenanordnung vor Beginn eines Backvorgangs ein Abstand in einem mittleren Bereich der Backplatten kleiner ist als ein Abstand in einem Randbereich der Backplatten, um Verformungen der Backplatten während des Backvorgangs auszugleichen.
Solche Backplattenanordnungen werden in industriellen Waffelbackautomaten zur vollautomatischen Herstellung von Waffelblättern eingesetzt. Zu diesem Zweck wird bei geöffneter Backplattenanordnung eine vorgegebene Teigmenge auf die Backfläche einer der Backplatten aufgebracht und die Backplattenanordnung geschlossen. Unterschiedlich ausgestaltete und aus dem Stand der Technik bekannte Backplattenanordnungen werden in den Druckschriften FR 2 365 293 A1 , DE 10 2005 014 561 A1 , US 2010 162 903 und DE 36 43 737 C1 beschrieben.
