- Procédé pour le transport d'un produit à hacher dans une machine à hacher, notamment pour de la viande ou de la chair à saucisse, qui fonctionne avec au moins une plaque perforée fixe traversée par la chair à saucisse (10, 10', 10", 10"') et- avec au moins un ensemble de coupe (7, 10'),- avec respectivement une plaque perforée fixe (10, 10', 10", 10"'), dont les trous (12') pour plusieurs plaques diminuent en diamètre de plaque en plaque dans le sens du transport de la chair à saucisse,- avec des dispositifs de coupe (7, 7', 7", 7"') entraînés en rotation coopérant avec les plaques perforées pour la chair à saucisse, et- avec un dispositif de transport (17) pour la chair à saucisse,- avec transport du produit à hacher après hachage, et- le produit à hacher passant à travers les trous (12') de la plaque perforée fixe (10, 10', 10", 10"'),- les plaques perforées (7, 7', 7", 7"') servant également de dispositif de coupe, qui sont entraînées en rotation, les plaques perforées de coupe (7, 7', 7", 7"') étant logées parallèles aux plaques perforées fixes (10, 10', 10", 10"') de telle sorte que l'action de coupe est causée par les bords de trou (16) tournés les uns vers les autres, et- une distance définie par la distance axiale entre les plaques perforées et le dispositif de coupe se situant entre 1/100 et 5/10 mm, ce qui exerce sur la chair à saucisse un effet de pompage sous vide selon le principe de la trompe à eau, et- le transport ayant lieu sur la base d'une dépression ou vide,- cette dépression existant ou se produisant à la sortie des trous,caractérisé en ce que
les trous (13) des plaques perforées entraînées en rotation (7, 7', 7", 7"') correspondent en nombre et en position à ceux des plaques perforées fixes (10, 10', 10", 10"'). - Procédé selon la revendication 1,
caractérisé en ce que
plusieurs plans de coupe sont formés par des plaques perforées, l'effet de transport dans le sens d'écoulement de la chair à saucisse étant créé par la dépression qui se forme entre les ensembles de coupe. - Machine à hacher notamment pour exécuter le procédé selon la revendication 1 ou 2, notamment pour le hachage de denrées alimentaires comme la viande et la chair à saucisse,- avec au moins un ensemble de coupe (7', 10'),- avec respectivement une plaque perforée fixe (10, 10', 10", 10"'), dont les trous (12') pour plusieurs plaques diminuent en diamètre de plaque en plaque dans le sens du transport de la chair à saucisse,- avec des dispositifs de coupe (7, 7', 7", 7"') entraînés en rotation coopérant avec les plaques perforées pour la chair à saucisse, et- avec un dispositif de transport (17) pour la chair à saucisse,- une distance définie par la distance axiale entre les plaques perforées (10, 10', 10", 10"') et le dispositif de coupe (7, 7', 7", 7"') se situant entre 1/100 et 5/10 mm, ce qui exerce sur la chair à saucisse un effet de pompage sous vide selon le principe de la trompe à eau,- les plaques perforées (7, 7', 7", 7"') servant également de dispositif de coupe, qui sont entraînées en rotation, les plaques perforées de coupe (7, 7', 7", 7"') étant logées parallèles aux plaques perforées fixes (10, 10', 10", 10"') de telle sorte que l'action de coupe est causée par les bords de trou (16) tournés les uns vers les autres,caractérisée en ce que
les trous (13) des plaques perforées entraînées en rotation (7, 7', 7", 7"') correspondent en nombre et en position à ceux des plaques perforées fixes (10, 10', 10", 10"'). - Machine à hacher selon la revendication 3, caractérisée en ce que la distance axiale entre les plaques perforées fixes ou plaques perforées de coupe ou une plaque de fermeture pour la production de vide se situe de façon définie entre 1/100 à 5/10 mm.
- Machine à hacher selon l'une quelconque des revendications 3 ou 4, caractérisée en ce que des bagues entretoises en rotation conjointe sont disposées axialement entre les plaques perforées de coupe et déterminant la distance axiale ou la position axiale de celles-ci.
