Definitions
- the invention relates to an oven with
- An oven door which is hingedly connected to the furnace housing on one side, and
- sealing elements comprise a flexible seal and a seal abutment surface and wherein the sealing elements arranged in the vicinity of the upper door edge and arranged near the lower door edge are formed differently.
- the invention relates to a baking oven for inserting a baking cart, also called Stikkenwagen.
- a baking cart also called Stikkenwagen.
- Such ovens are also called baking cabinet and allow a baker to bake a large number of baked goods at the same time, which are arranged on many stacked baking trays of the baking cart.
- the baking carriages have rollers that stand up on the ground. The baking carts are pushed through an oven door into the baking chamber of the oven.
- the oven housing has at its front an opening that leads to the oven.
- the oven housing forms a frame for the door laterally and above this opening.
- In the lower area preferably no or only a very shallow door threshold is provided, so that the rollers of the rack carts are not obstructed when inserted into the baking chamber.
- the door seals differ at the lateral edges and at the upper edge of the door of the door seal in the lower region of the door.
- sealing profiles made of elastic materials which abut against the closing of the door against a sealing abutment surface and the oven completely caulk.
- the elastic sealing profiles can be mounted either on the door or in the region of the door opening of the furnace housing.
- the sealing contact surfaces are formed by the sealing profiles with the door closed opposite surfaces.
- a sealing strip is often used, which rests on the floor in the region of the door opening and thus seals off the baking chamber from the surroundings of the oven.
- the lower hinge with which the oven door is attached to the oven housing, often a lifting device.
- This lifting device causes the door to be lifted when it is opened, so that the lower seal moves at a distance above the floor surface when the door is swung open.
- the complex design of such a craft oven and in particular its door means that different doors for ovens with right stop and for ovens with left stop are to produce. Often it only becomes apparent during assembly that the originally ordered side of the door stop can not be realized. The spatial conditions can cause a door hinged on the right door side is impractical or collides with the opening movement with other facilities in the bakery.
- the object of the invention is to avoid this disadvantage of time delay in the case of changing the side of the door stop.
- This object is achieved in that the arranged on the door near the upper and lower edge of the door sealing elements are releasably secured to each other and interchangeable with the door.
- the same door should be used to be attached to the oven housing with right stop and left stop, it must be able to be rotated in the door plane by 180 °. In this way, then the door hinges and the closing device for the door are each on the other side. If the door hinges are asymmetric, e.g. in the lower part of a lifting device is integrated into the band, the door hinges must also be replaced after turning.
- the sealing elements in the region of the upper and lower edge of the door are releasably secured and replaceable. For this reason, after the door leaf has been turned by 180 ° in its plane, the top and bottom seals can be interchanged.
- the door can now be fixed with a stop on the other side of the door opening of the oven housing. The conversion of the door takes only a few hours and can be easily integrated into the usual process of installing a craft oven.
- all sealing elements can be releasably secured to the door.
- the elastically deformable sealing elements can be fastened to the door, which are each fastened to the correct position when the stop side of the door is changed.
- the seal near the lower edge of the door is preferably an elastic sealing strip.
- a sealing hollow profile made of elastic and heat-resistant silicone is preferably provided in each case.
- the elastic sealing elements may in practice be provided on the door leaf, whereas the sealing abutment surfaces are located in the region of the door opening. They are formed for the side seals and the upper seal from the outer surface of the furnace housing in the door opening.
- the sealing contact surface for the lower seal is the bottom surface in the area of the door opening.
- All sealing elements of the door can be releasably and slidably mounted.
- the sealing hollow profiles are displaceable in practice in a direction perpendicular to the door plane.
- the seals can be loosened and secured to the door in an optimal position.
- the position should be selected so that the seal rests against the sealing abutment surface with a predetermined pressure and seals the baking chamber airtight.
- the sealing strip in the lower part of the door can be displaced parallel to the plane of the wing towards the ground, in order to ensure an optimal pressure force on the ground.
- the door handle may be located midway between the upper and lower edges of the door. This means that regardless of the installation position of the door handle is arranged in each case in the same, optimal operating height.
- the door handle in practice, two bars can be operated, which are arranged near the upper and near the lower end of the door edge.
- a door of a craft oven often bends in operation due to the large temperature changes.
- the Hinged bands ensures that the door closes reliably and sealingly.
- the joints on the door are releasably secure, so that the joint can be mounted with lifting either in the lower right corner of the door or after turning the door in the lower left corner of the door.
- Fig. 1 is a front view of an inventive
- FIG. 2 shows a sectional view of a baking oven with baking rack located therein and
- FIG. 3 shows a plan view of the inside of the door of the oven
- FIG. 4 is a side view of the door of Fig. 3,
- FIG. 1 shows a craft oven according to the invention which is commonly used in bakeries or bakery factories.
- the oven comprises a housing 1 with a door 2, which is closed during the baking process and can be opened for introducing and removing the baked goods.
- the door 2 is about two meters high and extends without a door sill to the ground. This ensures that through the door opening with the door open 2 a baking tray 19 (see Fig. 2), also called Stikkenwagen, can be inserted into the baking chamber 7 of the oven.
- the baking cart or rack 19 is with Rollers 20 are provided, which are rolled over the ground.
- a control panel 3 is further seen with a display screen.
- Parameters of the baking process e.g., duration, temperature, humidification
- the housing 1 consists of a thermally insulating top wall 4 and thermally insulating side walls 5.6.
- a baking chamber 7 is formed within the thermally insulating walls 4 to 6 of the housing 1.
- the baking chamber 7 is bounded above by a top wall 8 and laterally by a side wall 9.
- the top wall 8 and the side wall 9 of the baking chamber 7 are usually formed by a steel sheet made of stainless steel.
- In the side wall 9 are inflow openings 10 through which heated air flows into the baking chamber 7.
- In the top wall 8 are discharge openings 11 through which the air flows out of the baking chamber 7.
- Outlet openings 11, a fan 12 is disposed in the upper right corner of the housing 1.
- a horizontal flow channel 13 connects, which extends parallel to the upper top wall 4 of the housing substantially.
- the horizontal flow channel 13 is followed by a vertical flow channel 14, in which the heating register 15 and the burner 16 are arranged. Further, in Fig. 2, the exhaust pipe 17 of the burner 16 can be seen. The heated air flows from the burner 16 through a steam device 18 to the wall 9 with the inflow openings 10.
- 3 to 6 show details of the door 2 of the oven according to the invention.
- the door 2 has in the middle of a viewing window 21 made of transparent material, preferably made of heat-resistant glass on. Side of the viewing window 21, the door 2 is made of stainless steel. As in particular in the Fig. 5 and 6 seen, the door 2 consists of two interconnected flat components 22,23. The components take on various functional elements of the door 2 and heat-insulating designed to keep heat loss from the baking chamber 7 low. On the outer member 23, the pivot pins 24,25 are arranged.
- the lateral seal 26 can be seen enlarged in Fig. 5.
- the seal 26 is formed by a hollow profile made of elastic and heat-resistant silicone. It is connected via a retaining strip 28 to the inside, i. attached to the baking chamber 7 lying component 22 of the door 2.
- the fastening of the retaining strip 28 by means of releasable fastening screws 29.
- the fastening screws 29 project through slots 30 in the retaining strip 28.
- the lateral seal 26 is always optimally in the closed state of the door 2 in contact with the sealing abutment surface 41, which is formed by the outer surface of the furnace housing 1 in the region of the door opening.
- An upper seal 31 and the other lateral seal 27 consist of the same hollow profile as the seal 26 shown in Fig. 5 and are fastened in the same manner to the outer member 22 of the door 2, so that they are perpendicular to the plane of the door 2 slidably ,
- the lower seal 32 is shown enlarged in Fig. 6. It consists of a sealing strip made of elastically deformable and heat-resistant material. The sealing strip is divided in the present case into different strips in order to achieve an optimum sealing effect.
- the lower seal 32 is fastened by a mounting plate 33 near the lower edge of the door 2. Also, the mounting plate 33 has slots 34 which are penetrated by fastening screws 29. By means of this Attachment is the mounting plate 33 in the plane of the door 2 vertically displaceable. In other words, this allows the distance of the lower seal 32 to adjust the bottom surface 42, which forms the sealing abutment surface for the lower seal 32.
- All mounting screws 29 can be completely dissolved, so that all seals 26,27,31 and 32 can be removed from the door.
- the door is configured in Fig. 3 such that the pivot pins 24, 25 are fixed to the right edge of the inside of the door 2 (seen from the outside at the left edge of the door 2).
- the side seals 26, 27 can be used in both orientations, i. with right hinge axis of the door 2 and left hinge axis of the door 2, are attached to the same receptacles for the mounting screws 29. It can be seen that the lateral seals have a distance of a few centimeters to the upper edge of the door 2, on the other hand reach to the lower edge of the door 2.
- the hole pattern of the threaded holes for the fastening screws 29 on each edge of the door 2 is to be arranged so that the lateral seals 26,27 can be flush with both transverse edges, depending on the orientation of the door 2.
- an outer door handle 35 and an inner door handle 36 can be seen, which are fixed to a common axis of rotation 39.
- the axis of rotation 39 acts on a drive linkage within the door 2 for actuating two bars 37, 38.
- the axis of rotation 39 of the door handles 35,36 is located exactly in the middle between the upper edge and the lower edge of the door 2. In this way, it is ensured that the door handles 35,36 have the same height above the ground in the right stop and the left stop of the door 2.
- Fig. 4 it is indicated that the lower pivot pin 25 is associated with an integrated into the outer flat component 23 of the door lifting device 40.
- This lifting device 40 raises the door 2 when it is opened. As a result, the lower seal 32 is lifted off the ground. This reduces the wear of the lower seal 32.
- the lifting device 40 is also to be removed and attached together with the hinge pin 25 near the lower edge of the rotated door leaf.
