Abstract

Trays of dough pieces are stacked in a rack inside the cupboard so that an air stream at controlled temp. can be passed in closed circuit down one vertical edge of the rack, through the rack via horizontal passages between trays and then up the opposite vertical edge of the rack, partitions preventing direct contact between the air stream and dough pieces. Basically, the rack is constructed as a trolley which can be wheeled into the cupboard through a doorway which is closed and sealed by the back end of the trolley as the trolley fully enters the cupboard, air stream circulation passages being defined between the leading end of the trolley and the back of the cupboard, between tray bottoms and horizontal partitions in the rack and between the inside face of the back end of the trolley and adjacent tray ends. The cupboard may be adapted to house several trolleys side by-side, each entering by a separate doorway between two pillars on one of which is hinged an inwardly pivoting panel serving to close that doorway temporarily when no trolley is in that section. Arrangement is for bakers final proving oven for dough pieces to be made into bread. Fast loading and unloading of the proving cupboard is possible by rapid insertion and removal of fully-loaded trolley.
