Claims (17)

  1. Konvektionsofen, enthaltend:
    - eine Gehäusestruktur (2), die eine untere Trägerbasis (3) hat;
    - einen Backraum (4), hergestellt in der Gehäusestruktur (2) und eine Zugangsöffnung (5) an einer vorderen Fläche (6) der Gehäusestruktur (2) aufweisend;
    - eine Tür (7), montiert an der Gehäusestruktur (2) und in der Lage sich zu bewegen zwischen einer geschlossenen Position, in welcher sie die Öffnung (5) verschliesst, und einer geöffneten Position, in welcher sie durch die Öffnung (5) den Zugang zu dem Backraum (4) erlaubt;
    - Mittel (8) zum Heizen des Backraumes (4), wobei die Heizmittel an eine erste Seitenwand (9) des Backraumes (4) angeschlossen sind; wobei der Backraum (4) eine im wesentlichen konstante Weite entlang einer Richtung hat, die sich von der Öffnung (5) bis zu der rückwärtigen Wand (10) des Backraumes (4) erstreckt; wobei die Heizmittel (8) wenigstens teilweise an der genannten ersten Seitenwand (9) des Backraumes (4) montiert sind und überhängend in den Backraum (4) hervorstehen; wobei die Heizmittel (8) ein Heizelement (28) und einen betrieblich an dieses angeschlossenen Ventilator (29) enthalten, beide montiert an der ersten Seitenwand (9), sowie eine Abdeckstruktur (30), lösbar an der ersten Seitenwand (9) um das Heizelement (28) und den Ventilator (29) herum montiert; wobei die Abdeckstruktur (30) durchgehende Bohrungen/Schlitze (35) aufweist; und wobei die Abdeckstruktur (30) innere und äussere Platten (40, 41) enthält, die als Luftableiter für den Umlauf der Luft zwischen dem Ventilator (29) und einem Nutzvolumen (11) des Backraumes (4) dienen, dadurch gekennzeichnet, dass sie ausserdem verhindern, dass die Luft auf die Tür (7) und auf die rückwärtige Wand (10) stösst.
  2. Konvektionsofen nach Patentanspruch 1, dadurch gekennzeichnet, dass sich die erste Seitenwand (9) vorwiegend auf solche Weise erstreckt, dass sie eben von der Öffnung (5) bis zu der rückwärtigen Wand (10) verläuft.
  3. Konvektionsofen nach Patentanspruch 1, dadurch gekennzeichnet, dass die Abdeckstruktur (30) kastenförmig mit einer offenen Fläche ist oder vorwiegend C-förmig.
  4. Konvektionsofen nach Patentanspruch 1, 2 oder 3, dadurch gekennzeichnet, dass die Abdeckstruktur (30) wenigstens teilweise im Verhältnis zu der ersten Seitenwand (9) gedreht werden kann, und zwar zwischen einer Betriebsposition, in welcher sie dicht an der ersten Seitenwand (9) ist und das Heizelement (28) und den Ventilator (29) einschliesst, und einer Ruheposition, in welcher sie zum Innenraum des Backraumes (4) hin gedreht ist und den Zugang zu dem Heizelement (28) und dem Ventilator (29) erlaubt.
  5. Konvektionsofen nach einem jeden der Patentansprüche 1, 2, 3 und 4, dadurch gekennzeichnet, dass die Abdeckstruktur (30) ebenfalls eine Rohrleitung (36) aufweist, die ein erstes freies Ende und ein zweites Ende (37) hat, welches an eine Wasserzufuhrdüse (38) angeschlossen werden kann, montiert an der ersten Seitenwand (9).
  6. Konvektionsofen nach Patentanspruch 5, in Kombination mit Patentanspruch 4, dadurch gekennzeichnet, dass das zweite Ende (37) und die Düse (38) sich zueinander selbst zentrieren und miteinander verbinden, wobei sie der Umdrehung der Abdeckstruktur (30) aus der Ruheposition in die Betriebsposition folgen.
  7. Konvektionsofen nach jedem der vorstehenden Patentansprüche, dadurch gekennzeichnet, dass das Heizelement (28) eine Anzahl von rohrförmigen Austauschelementen (32) enthält, positioniert rund um den Ventilator (29) entlang kreisförmigen Abschnitten und koaxial zu dem Ventilator (29).
  8. Konvektionsofen nach Patentanspruch 7, dadurch gekennzeichnet, dass die Austauschelemente (32) in einer Anzahl von Ebenen im wesentlichen parallel zu der ersten Seitenwand (9) angeordnet sind.
  9. Konvektionsofen nach Patentanspruch 7 oder 8, dadurch gekennzeichnet, dass die Austauschelemente (32) entlang zwei oder mehreren kreisförmigen Abschnitten angeordnet sind, welche unterschiedliche Radien haben und auf unterschiedlichen Ebenen liegen.
  10. Konvektionsofen nach Patentanspruch 9, dadurch gekennzeichnet, dass die Austauschelemente (32) auf solche Weise positioniert sind, dass sie für jede Ebene, in welcher sie liegen, einem einzigen Kreisumfang folgen.
  11. Konvektionsofen nach einem jeden der vorstehenden Patentansprüche, dadurch gekennzeichnet, dass das Nutzvolumen (11) zur Aufnahme der zu garenden Produkte eine querverlaufende horizontale Abmessung hat, lotrecht zu der ersten Seitenwand (9), die geringer ist als die längsverlaufende horizontale Abmessung, die parallel zu der ersten Seitenwand (9) verläuft.
  12. Konvektionsofen nach Patentanspruch 11, dadurch gekennzeichnet, dass der Backraum (4) ebenfalls ein Einschubgestell (12) enthält, um eine Anzahl von Backblechen oder Gittern (13) zu tragen, wobei das Einschubgestell innerhalb des Nutzvolumens (11) montiert ist.
  13. Konvektionsofen nach einem jeden der vorstehenden Patentansprüche, dadurch gekennzeichnet, dass er ebenfalls ein Bedienfach (18) enthält, hergestellt zwischen der ersten Seitenwand (9) des Backraumes (4) und einer zweiten Seitenwand (39) der Gehäusestruktur (2).
  14. Konvektionsofen nach Patentanspruch 13, dadurch gekennzeichnet, dass die Gehäusestruktur (2) ebenfalls eine Bedientafel (19) enthält, angeordnet an der Frontfläche (6) des Bedienfaches (18) und positioniert an der Seite der Tür (7), wenn die Tür sich in der geschlossenen Position befindet.
  15. Konvektionsofen nach einem jeden der vorstehenden Patentansprüche, dadurch gekennzeichnet, dass die Tür (7) einen durchsichtigen Bereich (20) hat, um die Beobachtung des Inneren des Backraumes (4) zu erlauben.
  16. Konvektionsofen nach Patentanspruch 15, dadurch gekennzeichnet, dass der durchsichtige Bereich (20) auf solche Weise angeordnet ist, dass er in Längsrichtung zu dem inneren Teil des Backraums (4), welcher keine Heizmittel (8) enthält.
  17. Konvektionsofen nach einem jeden der vorstehenden Patentansprüche, dadurch gekennzeichnet, dass die Tür (7) eine äussere Hauptstruktur (21) enthält und eine innere Glasscheibe (23), angeschlossen an die äussere Struktur auf solche Weise, dass sie durch Umdrehung abnehmbar ist.
