Abstract
Bei einem Verfahren zur Regelung eines Garvorgangs eines Gargutes (15) in einem Garraum (13) eines Dampfgarers (11) wird während des Garvorgangs zumindest zeitweise eine aus dem Gargut austretende Feuchte (F) im Garraum durch einen Feuchtesensor (39) über der Zeit (t) erfasst, wobei während einer Messphase ein Einbringen von Dampf (34) in den Dampfgarraum unterbleibt und der Feuchtesensor ausgewertet wird. Bei vorgegebenem Garvorgang mit festgelegten Zeiten der Zuführung von Dampf (34) wird aufgrund der Auswertung des Feuchtesensors (39) während der Messphase das Garende bestimmt. Dabei wird vor der Messphase während einer Dampfphase Dampf (34) in den Garraum (13) eingebracht, wobei die Dampfzufuhr nach der Dampfphase und vor der Messphase während einer Belüftungsphase beendet wird und durch Belüftung die Konzentration von Dampf im Garraum stark reduziert wird.
